Happy New Year again!!

 Busy Always

Are you busy?  How busy are you? On the busyness scale of 1 to 10?

Are you wondering why I am asking?  Sure you are…

Here’s why – Everyone is busy.  You ask someone how they are doing and they reply with, “I’m so busy!”  They don’t say they’re good, great, awesome, stupendous, marvelous, out of this world joyful, on top of the world or ready to spontaneously combust with excitement.  Nope…just busy!!  AArrrrgh.

So this is what I am going to do.  I am going to spend 2013 being as un-busy as possible.  Now that doesn’t mean I am going to sit on the couch and eat bon-bons, which I don’t think they even make anymore.  I think now they call them dibs and not to get off topic but have you tried the mint dibs?  Holy camoly they are crazy good.  You can find them in the freezer section of your grocery store.  Now I sound like a commercial.  Someone stop me!!

Back on point – This year we traveled quite a bit and by doing so I saw how it changed our family in the most positive of ways.  Our trip to Paris and Amsterdam opened our eyes to living a healthier lifestyle and our trip to Africa just filled our souls in the most organic way possible.  Traveling has a way of clarifying life and makes the hustle and bustle we surround ourselves in seem kind of silly.

So here’s the goal and I hope you’ll join me.  I am overjoyed with the life God has given me and my family.  With that said, I still feel a certain clutter both spiritually, mentally and physically.  I feel like I can do better.  And when you know better you do better.

I am going to take 2013 day by day and see how far I can travel in my quest of simplification.  I hope you’ll ride along with me so by 2014 we can be un-busy and fulfilled together.  Then when someone asks how we are doing, our reply will be, “If I was any happier, they’d have to commit me!”

Well, well, well…

It has been some time since I’ve posted anything as I became busy and the first thing to fizzle away way my blog.

So why am I writing?  Because, to my surprise there are people who actually miss it :)  Which makes me happy!!  Thank you.  My children also miss my writing so with some peer pressure I am back up and running.

I am looking forward to a wonderful 2013.  2012 was awesome and I can hardly wait to see what this year has in store for myself and those I love.  I hope that your year was wonderful as well.  If not then look forward to all the prospects of a fresh new beginning.

I’m not one for new year’s resolution, however this year I have made a few.  I’m not going to share them with you now.  I am going to let them come out in due time.  Sorry for the build up and let down – you’ll just have to wait.

To Pit or Not To Pit – That is the Question??

Pit Bulls – You either love them or you just don’t know enough about them…

My guess is most of you don’t know enough about them.  This is evidenced by the pit bull breed bans established not only in certain areas in the United States, but also in Europe.  Which is ironic since that is where the breed was originally developed.

So as I educate myself – let me bring you along…you’re welcome!!

In proper terms the American Pit Bull Terrier (recognized by the ADBA and the UKC), the American Staffordshire Terrier (recognized by the AKC) and the Staffordshire Bull Terrier (recognized by the AKC and UKC) were an experiment in the early 19th century by breeders in the British Isles who decided to cross the English Bulldog with the Old English Terrier in hopes of finding the gameness of the terrier and the athleticism of the bulldog (please note this was a very different bulldog from the (laid back) English Bulldog we know today).

“Gameness” when referred to in dogs refers to their drive, their working ability, their determination not to give up until their task is complete.  The dog who will work until complete exhaustion.  The dog whose handler must stop him for his own well-being.  The dog who will search for the missing or the elusive until there is nothing left to give.  That is gameness and any dog can have it.  Unfortunately, for this breed it has been used against them for the profit of the unscrupulous.

From my research the term “pit bull” was given by none other than us humans once we started fighting them in – you guessed it – a PIT.  Clever, right.

So here’s the real kicker – In continuing my research I’ve found that the APBT (American Pit Bull Terrier), the AST (American Staffordshire Terrier ) and the SBT (Staffordshire Bull Terrier) were not bred to be aggressive towards humans or used for the purposes of guarding.  Rather they were bred for the purposes of working.  They were brought over from England by the founders - these dogs were used as catch dogs for semi-wild cattle and hogs, to hunt, to drive livestock, and as family companions.

So going a step further I decided to go to the American Temperament Test Society’s Standardized Temperament Test Page and view the statistics – These stats commence as of February 2012.

The American Pit Bull Terrier has an 86.8% pass rate.  Beating out the Golden Retriever and the Standard Poodle just to name a few.  How can that be?

Other bits of info I found interesting was that “responsible” and even not so “responsible” breeders have actively culled human aggression from their blood lines.  Even in the underground world of fighting, it is not useful or desirable for a dog to attack handlers or spectators… DUH!

As I moved on through my reading I found examples of how the APBT, AST and SBT are mostly bred for conformation, temperament, weight-pulling, obedience trial or therapy work.  They’re also widely used as companion dogs and police dogs.

So what have I learned from my research?  Once again, it comes down to us – you and me.  What do I mean by that?

Breeding!!  This lovely animal had a very specific purpose when first developed  - a strong dependable working dog.  That purpose became skewed by the greed of pit fighters and even worse by the negative media attention they receive.  There’s nothing better than a good pit bull attack story to throw the public into a frenzy and the media knows that!

But like all things, we do nothing about it.  We ban the breed – not the breeders.  We make these dogs “go somewhere else”, make them someone else’s problem or euthanize them.  We shut our eyes, put our fingers in our ears and hum a tune so we don’t claim responsibility.  Typical.

Humans create the problem – humans ignore the problem.

Instead, we should be shutting down these “backyard breeders” as statistically these dogs are the ones who end up in the shelters and rescues and start working with responsible breeders to maintain clean, well-balanced blood lines.  We need to spay and neuter our pets and we need to report dog abuse and dog fighting immediately.

But, really am I preaching to the choir here?

Well, maybe – maybe not.  Those who know better, do better and now that I know better – I’ll be sure to do better.  Will you?

Pit Bull breeds have become famous for their roles as soldiers, police dogs, search and rescue dogs, actors, television personalities, seeing eye dogs and celebrity pets. Historically, the Bull Terrier mix Nipper and Petey from the Little Rascals, are the most well-known. Why Vegetarians Are Superior Human Beings…

That title is not true.  Well maybe…

I am just being mischievous on this fine Monday Morning!

How many of you were ready to fry me for being mean to carnivores?

I am chuckling right now :)

You may have guessed, I am feeling a little feisty today and I’ll tell you why.

I have encountered several people of late who not so subtly feel their views and actions are far superior to us mere mortals.

Let me explain…I am on a constant journey of self betterment.  Believe me, I need it.  Not going to be claiming any gold metals for perfection anytime soon.  But I will say this – I am constantly trying to instill in myself the qualities that will make me a better wife, mother, daughter, sister and friend.

With that said I believe I am on the right path or sidewalk, maybe a road – probably dirt - let’s just say I’m getting there – with God’s gentle grace.

So I ask these thought-provoking questions -

Why are vegetarians better that carnivores?

Why is homeschooling better than traditional school?

Why should you rescue a dog or cat?

Why should you adopt a child?

Why should you recycle?

Why??  Why should we do these things or believe these things?

Wait – don’t answer – keep reading….

Everyone is going to have a very different answer that they feel very passionate about, especially since the above are very important issues to our society.

I’m not here to discuss these issues because I could keep going with examples and you could keep coming with opinions and beliefs and then you would miss my profound thought and there’s just no need for that to happen.  So keep reading and stay with me here!

We tend to get tunnel vision when it comes to our passions.  Case in point – Have you ever been pouring your heart into your cause and all of a sudden you can’t understand why the rest of the world doesn’t see what you see.  The rest of the world has suddenly become a bunch of ignorant, bumbling fools right before your eyes.  I mean it’s so obvious to you!  What is wrong with everyone?  Sure you have, we all have.

What you must understand is – at some point YOU were one of those bumbling fools.  Before you found your passion YOU walked around oblivious to certain injustices in the world.  YOU were right there in the front row with blinders on to other people’s causes.  YOU can NOT judge.  You already built your glass house.  Put the stone down, step away slowly and no one will get hurt, dear friend.

Reeling it back in…

I am a vegetarian – have been for 21 years, I homeschool my kids, I’ve rescued dogs since I was 18, I rescued cats until I developed severe allergies, I have also rescued a horse, a few goats, I recycle and I always stop for turtles crossing the road.  All these are good but there are a million, a billion, a bazillion other things that I could be doing that I’m not, that you are and vice versa.

So here’s my point and I’ll make it quick – life and life lessons all come down to timing.  Just because I am at a point in my life where I am passionate about certain things doesn’t mean everyone else is and so on and so forth.

When you jump on some bodies back (not literally please – that might hurt) or judge them from your righteous pedestal make sure you look back and see how long it took you to get where you are today.  It’s not fair to use your life timeline as a broad guideline for the world.

Just remember, if you are doing something that is good and we all know the difference between good things and bad things.  Make sure you lead by example and always use steady but gentle pressure to get your point across.

I am going to repeat that – Steady but gentle pressure.

It is important to try to make the world a better place.  Actually, it is our job, in essence our duty, our responsibility.  But you need to do it with some poise and grace.

No one likes the in your face I am always right person.  Those people wear me out – I tend to daydream while they yap, yap, yap away about why their latest cause is the only way.  They just conveniently forget where they were 5 years ago…5 minutes ago!  Those are the people who actually turn people away from causes.

Don’t do that.  Don’t be that person.  I’ve been that person – we all have most likely.

With maturity comes wisdom (well most of the time) and with my wisdom I am working on making my views just that – my views.  The rest of the world can see how I live and if they see something they like I will gladly share, guide and mentor.  It would be my honor and privilege.

I am constantly looking to educate myself.  Just recently I have started on a quest to eat better and have come across some wonderful women who are gently bestowing their knowledge on me.  I am grateful for their grace and guidance.

Let the good things in your life be an honor and privilege for those around you.  If someone is interested in what you’re doing they will ask you to help guide them.  That’s when share your heart out!!!  That’s when they’re ready to unite for your cause.

Quiet, Listen – Let the words of others be a gentle breeze that enhances your life and guides your journey.

This quote was just what the doctor ordered for my thoughts this morning.

I enjoy simplicity, I find it especially necessary in our world today that has inundated us with “things” everywhere.

Overstimulation from media, family, friends, work, social life and home life can become maddening.

About three years ago we as a family decided to take a step back and try to quiet some of the noise.

Low and behold it has worked.  Immediately our close little family became closer and the “noise” seemed to quiet itself.

My prayer for you this beautiful Sunday is that you find just the right balance of simplicity to fit your life.

The Best Black Beans

Beans, Beans, They’re good for your heart, The more you eat them – the more you…..

That’s pretty much all I know about beans. Which is not really saying much!

I believe the song though to be very accurate because beans are said to be good for your heart as well as leaving you the urge to….

I am cracking up.

Trying to stay focused…Back to the topic at hand. I had NEVER eaten beans, there was just something about the texture that grossed me out. With that said, a couple of months ago I put on my big girl pants and made myself try them. What I found out was that I really liked beans – imagine that!

One of the reasons I believe I am enjoying these beans is because of the way they have been prepared. They are packed with flavor and cooked to just the right consistency for me and my family.

You should know I prefer to use a pressure cooker to prepare my beans. You can of course use a traditional sauce pan, however you would have to adjust the cook time. No biggie – they will work either way.

Today’s Starting Line Up: Black Beans, Butter, Onion, Cubanelle Pepper, Garlic, Dried Oregano, White Wine Vinegar, Water and Mushroom Broth.

IMPORTANT: You will want to soak your beans for 4-8 hours before you cook them. As seen in the photo above.

Turn your stove to medium hight heat – #8 on my stove.

Add butter to your cooker and melt.

Now this is a handy dandy device I have fallen in love with! It makes quick work out of onions and other vegetables.

For a while I was a knife snob. I thought by chopping everything by hand it was somehow better – I learned my lesson. Spank, Spank…No more knife snob here.

This machine has saved me so much time. The only thing I regret is not finding it sooner!!

So back to the recipe – Chop 1/2 an onion, please.

Here is an extra photo just so you can see how pretty my onion looks. Aawww…You’re welcome!

Place 1/2 cup of chopped onions into your cooker.

Followed by 3 diced garlic cloves.

Followed by 1/4 cup cubanelle peppers diced.

Let these ingredients sauté until you can really smell them. About 2-3 minutes.

Add 1 tsp dried oregano.
Followed by 3 tbsp of white wine vinegar.

Let this cook for another 2-3 minutes.

Add the water.

Followed by the mushroom broth.Drain the beans. You do not need to keep the liquid.

Add the beans to the cooker.

Turn the heat to high and bring to a boil.

Above is a photo of a pressure cooker. Which I assume you figured but just in case – that’s what it is.

I use a stove top version. There are also electric versions, however I find you really don’t save that much time with them since it takes quite a while for them to come to temperature.

Again, what ever you are more comfortable with is what you should use!! I want you to be happy!!

This is important:

  1. Once the liquid is boiling place the lid on your pressure cooker.
  2. Drop the temp to medium high.
  3. Once the pressure indicator pops up that means you are at the right pressure for cooking.
  4. This is when you start your timer.
  5. Set your timer for 10 minutes.
  6. Once the timer rings pull your cooker off the stove and empty the steam.
  7. Be very careful when releasing the steam from your cooker. If you touch the steam it WILL burn you severely.
  8. I wear oven mitts just to be extra cautious when handling the cooker and order everyone out of my kitchen – better to be safe than sorry!!

This is what it will look like when you open the pot.

Always take a test of your beans just in case you want them cooked more.

Once you are satisfied you can pour your beans into one container or separate the beans from the liquid.

DO NOT throw away the liquid – This liquid is like GOLD!! Black bean juice is great to use in lieu of stock or water in all sorts of recipes!!

And there you have it – The best black beans…If I do say so myself, which I actually did say, so you get it right? – Anyway they’re goooood.

Vegetarian – Black Beans

Ingredients

  • 2 cups black beans, soaked for 4-8 hours
  • 1 tbsp. butter
  • ½ cup onions
  • ¼ cup cubanelle pepper
  • 3 cloves garlic
  • 1 tsp oregano dried
  • 3 tbsp. white wine vinegar
  • 2 ½ cups water
  • 2 ½ cups mushroom broth

Method

    MAKE SURE TO SOAK YOUR BEANS FOR 4-8 HOURS PRIOR TO COOKING.

  1. Place pressure cooker on stove and turn heat to medium high.
  2. Melt butter.
  3. Add diced – onion, cubanelle pepper and garlic.
  4. Saute for 2-3 minutes.
  5. Add dried oregano and white wine vinegar.
  6. Cook for an additional 2-3 minutes.
  7. Add water and broth.
  8. Drain beans and add to broth.
  9. Turn heat to high.
  10. Once liquid is boiling place lid on cooker – secure properly.
  11. Once pressure indicator is ready – drop temp to medium high.
  12. Set timer for 10 minutes.
  13. Pull cooker off stove and depressurize.
  14. Separate liquid from beans if desired or store together.
